Salted Chocolate Pretzel Toffee Bark

As I was going through my rss feeds this morning, this one post caught my eye. It was one from Mel's Kitchen Cafe (subscribe! You will not regret it!) it may have been the title of the post - Salted Chocolate Toffee Pretzel Bark, or the fact that it called for only 4 ingredients, or that I happened to have everything I would need to make it in my cupboards, or maybe it was just the fact that this sounds dang good, and I'm vulnerable this week when it comes to sweets. Whatever the reason, I read it and had made it within the hour. It is wonderful. Thank you, Mel.

Here's the recipe from her blog (but I cut it in half, since I knew I'd eat pretty much all of it).

INGREDIENTS:
A couple handfuls of broken pretzels to cover about half a cookie sheet
1/2 cup (1 stick) butter
1/2 cup packed light brown sugar
1 cup (half a 12-ounce bag) semisweet chocolate chips
Sea salt

DIRECTIONS:
Preheat the oven to 375° F. Line a rimmed baking sheet with foil or parchment paper. Cover the bottom of the pan in a layer of broken mini pretzels.

In a small saucepan over medium heat, combine the butter and brown sugar. When the mixture starts to gently simmer and bubble, let it cook for 3 minutes without stirring. Immediately pour the hot caramel mixture over the pretzels in a back and forth motion to cover most of the pretzels (a few empty/dry spots are ok as the caramel will fuse together during baking).

Bake for 5 minutes. Remove the pan from the oven and place the pan on a cooling rack. Immediately sprinkle chocolate chips evenly over the top of the hot caramel and pretzels. Let the chocolate chips sit for 2-3 minutes until they melt. Use an offset spatula or rubber spatula to gently spread the melted chocolate over the toffee. Lightly sprinkle with sea salt.

Let the toffee cool completely at room temperature then refrigerate if needed to help the chocolate set up. Break the toffee into pieces and try not to eat the whole batch.

We have such a fun event to enjoy these at tonight, which I am so excited about! It involves a ski-slope, a symphony, cannons, and a picnic. Details tomorrow.

  1. Oh my mouth is watering, I am craving more of this so bad. If only we had some pretzels on hand this would be made within the hour!
