I made some pretty yummy lemon bread over the weekend. It was on the healthier side, too (well, it had a bit of sugar, but besides that it was decent).
The recipe is from Mel's Kitchen Cafe (again), but I changed it ever so slightly. I used half whole wheat flour, half white, and I used coconut oil instead of vegetable oil. This bread is delightful. It's so moist (it's full of applesauce and Greek yogurt) and the sweet and tangy lemon glaze that goes on top is perfect. as an added bonus, your house will smell of lemons all day after you zest those three lemons. (so glad I finally bought a lemon zester....)
