Turkey Burgers (with Feta, Sun-dried Tomatoes, and Spinach!)

This just might be our favorite meal of the summer. It is incredible, quick and easy, and I'd say it's relatively healthy. Kimball had had them before we were married (made by his younger sister, who cooks like a champ, and who gives us all sorts of great food ideas), and he insisted that we incorporate them into the meal rotation. We like these babies enough that we bought our sun-dried tomatoes at Costco. I bet it won't last long either. 


These are the best little burgers ever! The recipe, which is actually for sliders (we just make them bigger to be be burgers) is from the Picky Palate blog. Go there. I've adapted it ever so slightly.


Here's the recipe:


Ingredients:


Burgers
1 pound ground turkey
1/2 cup crumbled feta cheese
1/4 cup sun-dried tomatoes, chopped
1/2 cup baby spinach leaves, chopped

Pinch of salt, pepper and garlic salt
Sun-Dried Tomato Mayo
1 cup mayonaise
2 tablespoons sun-dried tomatoes, drained and chopped

Baby spinach leaves
Whole wheat hamburger rolls

Instructions:
Heat a non-stick skillet over medium heat. Mix turkey, feta, sun-dried tomatoes, spinach and seasonings in a mixing bowl until combined. Form into patties (I think we usually get about 6 with this recipe - depends on how big you want them). Place formed patties into the hot skillet and cook for about 5 minutes on each side, until they're golden brown and cooked through. 

Mix mayo with sun dried tomatoes, and spread on the rolls. Layer a few spinach leaves on the roll, add the patty, and enjoy your burger... or three.
