Summer food

I love summer food! I love how fruit and veggies are so abundant (and much more appealing, to me at least) in the summer. We been living off of watermelon, berries, spinach tortellini soup (recipe from Annie's Eats) turkey avocado sandwiches, roasted tomatoes, and, of course, our daily thick, icy, smoothies.

The roasted tomatoes are more my thing I guess... not so much Kimball's. I make them for lunch when he's at work. They are like candy. I kid you not. Only they are much healthier.

Here's how you make them (because you're going to want to make them):

1. Slice a tomato in half (you could also do thick slices, but I like having a lower cheese to tomato ratio).
2. Spray (or drizzle) each half with a bit of olive oil.
3. Sprinkle each half with a bit of salt, oregano, and a bit more of basil (fresh is great, but I didn't have any, and dried is cheaper and easier, and almost as tasty). If you prefer one herb over the other, just use the one you like. If you use more oregano it will be more reminiscent of pizza or spaghetti sauce. If you use more basil it will be more reminiscent of heaven.
4. Cover the top with feta, mozzarella, or a bit of both (I did both).
5. Pop the little lovelies into the hot oven (I used our toaster oven - quicker, less electricity, and doesn't heat the place up).
6. Let them roast for 10-15 minutes. Just watch and make sure the cheese is turning golden brown. The tomatoes should be soft, but should retain their shape.
7. Drizzle a bit of balsamic glaze or balsamic vinegar on top (not too much!) and let them sit for a few minutes to cool down.
8. Enjoy the incredible little creations, and lick the remaining tomato juice and balsamic off the plate.

I ate six of these things in two days. I can't get enough. Plus, as a happy bonus, tomatoes are full of lycopene, which helps to reduce the risk of sunburn, and who doesn't need that little perk right about now?

  1. I was on a roasted tomato kick a while back too when I saw that photo on pinterest on them floating around! I LOVED IT! And luckily I had a live basil plant at the time and I would have it on toast and it was the BEST tomato sandwich ever. I love tomatoes oh so much! And I agree, summer food is the best!
