Last night for dinner I made Avocado Chicken Parmigiana, which sounds and looks fancier and more complicated than it really is. It was surprisingly simple and quick to make and sooo delicious! (If you want the recipe just google "Avocado Chicken Parmigiana" - it should be the first result to come up.)
It's just half a chicken breast, breaded, cooked partway, and then you add tomato-based pasta sauce, sliced avocado, and mozzarella cheese. We served it over angel hair pasta with a salad, but you could mix that up as well. I'm so happy I have leftovers for today!
